Almond
Pancakes
2 cups milk
2 cups flour
1 cup chopped almonds, toasted
2 eggs
1/4 cup sugar
1/4 cup butter, melted
1 tablespoon baking powder
1/2 teaspoon almond extract
1/2 teaspoon salt
Combine the milk, eggs, butter and almond
extract; beat lightly. In a seperate bowl, cobmine the dry
ingredients except the almonds. Mix the milk mixture and flour
mixture together, until blended. Gently fold in almonds. Cook
pancakes over medium heat. Serve with warm blueberry
syrup.
