Beer Batter Chicken
Batter:
3 eggs
1/2 cup flour
1/3 cup cornstarch
1/3 cup beer
1/4 teaspoon curry powder
1/2 teaspoon sugar
1 teaspoon seasoned salt
Beat eggs. Add remaining
ingredients and mix well.
3-4 pound chicken, cut into
pieces
1 stalk of celery, sliced
1 small onion, sliced
1 carrot, sliced
1 teaspoon salt
1/4 teaspoon pepper
flour
oil
Place chicken pieces in
kettle and cover with water. Add celery, onion, carrot, salt
and pepper. Simmer about 25 minutes. Let chicken cool. Shake
chicken in flour, then dip in beer batter. Deep fry in oil,
about 5 minutes.
